Veg Samosa

Ingredients:
For Stuffing:
Potatoes - 4 (boiled, peeled & mashed)
Green Peas - 1/2 cup (boiled)
Green Chilies - 2 (finely chopped)
Ginger - 1/2 tsp(crushed)1tbsp
coriander - 1 tsp (finely chopped)
Cashews nuts - 6(optional)
Garam masala - 1/2 tsp
Salt to taste
red chili powder - 1 tsp
Dry Mango powder( Amchur) - 1/2 tsp
For Cover:
all purpose flour (Maida) - 1 cup
Water for making dough
oil - 2 tsp
salt - 1/4th tsp
Method:
For Stuffing :
In a bowl add mashed potatoes, salt, red chili powder, dry mango powder, garam masala, green chilles, ginger and Mix well.
Add boiled green peas, cashews nuts and mix well.
Add chopped coriander and keep aside.
For Cover:
Mix all purpose flour with salt, oil except water.
Add a little water at a time.
Pat and knead well for several times into a soft pliable dough.
Cover it with moist Muslin cloth and keep aside for 15 minutes.
Procedure:
Make small rolls of dough and roll it into a 5"-6" diameter circle.
Cut the circle into two parts like semi-circle.
Now take one semi circle and fold it like a cone. Use water while doing so.
Place 2 tsp of filling in the cone and seal the third side using a drop of water.
Heat oil in a kadhai and deep fry till golden brown in a medium flame.
Serve samosa hot with tomato sauce and chilly sauce.
